Why a 2x72
Ask knife makers and fabricators and most will tell you to skip the small grinders and go straight to a 2x72. The 2 in. x 72 in. belt is the standard size, so belts are easy to find in every grit and abrasive, and the machines take a wide range of wheels, platens and attachments.
Fixed speed or variable speed
A fixed-speed grinder runs fast, which is great for stock removal. Variable speed (usually through a VFD) lets you slow down for finishing, heat-sensitive steel and polishing. If you do fine work on knives or tools, variable speed is worth it.
Contact wheel and platen
The contact wheel diameter sets the hollow grind radius. 8 in. and 10 in. wheels are common for knives. A flat platen gives you flat grinds and squaring. Small-wheel attachments and slack-belt work round out what one machine can do.
Power and mounting
Many 1.5 HP grinders run on 120V; larger motors and VFD setups may want 240V. Plan on a solid pedestal or bench and dust collection: grinding swarf gets everywhere.
Belts are a running cost
